It is a flour obtained by grinding on cylinder of kamut, a durum wheat varieties. From a nutritional point of view kamut has a higher content in eight out of nine minerals, in particular is rich in magnesium and zinc. Seven vitamins has a higher content for four and minor concentrations for three. It is interesting to note that kamut contains 30% more vitamin E. It also has significantly higher levels of all the most important fatty acids and presents a higher level in sixteen out of 18 amino acids. The concentration of six amino acids is from 34 to 65% higher. These amino acids are arginine, cystine, Histidine, threonine, aspartic acid and serine. Although kamut contains gluten, many people believe it is less allergenic wheat common. In a couple of research studies conducted by Dr. Eileen Yoder, President of the International Association on food allergy (IFAA), Tinley Park, Illinois, USA, the 70% percent of those in the study had allergies to wheat were able to eat the product without difficulty.
